Malai Boti Bun Kabab Recipe
Ingredients:
For Malai Boti Marinade:
500g boneless chicken pieces, cut into cubes
1 cup plain yogurt
3 tablespoons cream
2 tablespoons grated cheese
2 tablespoons ginger-garlic paste
1 tablespoon lemon juice
1 teaspoon white pepper powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
2 tablespoons cooking oil
Skewers for grilling
For Bun Kababs:
4 burger buns
2 tablespoons butter
Lettuce leaves
Sliced tomatoes and onions
Ketchup and mayonnaise (optional)
Chaat masala (optional)
Instructions:
1. Prepare the Malai Boti Marinade:
In a bowl, combine yogurt, cream, grated cheese, ginger-garlic paste, lemon juice, white pepper powder, cumin powder, coriander powder, turmeric powder, red chili powder, salt, and cooking oil. Mix well to form a smooth marinade.
Add the chicken cubes to the marinade, making sure they are well coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2-3 hours, or preferably overnight. This allows the flavors to infuse into the chicken.
2. Grill the Malai Boti:
Preheat the grill or grill pan over medium-high heat.
Thread the marinated chicken cubes onto skewers, leaving a little space between each piece.
Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has a nice charred appearance on the outside. Baste with a little oil or butter if desired for added flavor.
Once the Malai Boti is cooked, remove from the grill and keep warm.
3. Assemble the Bun Kababs:
Slice the burger buns in half horizontally.
Heat a skillet or griddle over medium heat and melt the butter. Toast the bun halves on the skillet until they are lightly golden and crispy.
Spread a layer of mayonnaise and ketchup on the bottom half of each bun, if using.
Place a lettuce leaf on the bottom bun, followed by a few slices of tomatoes and onions.
Carefully slide the cooked Malai Boti pieces off the skewers and place them on top of the vegetables.
If desired, sprinkle a pinch of chaat masala over the chicken for extra flavor.
Place the top half of the bun over the chicken to complete the burger.
4. Serve:
Serve the Malai Boti Bun Kababs immediately with some extra lettuce, tomatoes, and onions on the side.
You can also serve them with French fries or potato wedges for a complete meal.
